About the Recipe
Cashew Mayonnaise is a perfect condiment for your burgers or to dress for food lovers. This mayonnaise is a load of healthy fats, proteins, vitamins, and minerals. Uncomplicated to make and fast to create.

Ingredients
1 Cup Raw Cashews
8 Tbsp Spring Water
2 Tsp Mustard/1 Tsp Dry Mustard
1/2 Organic Lemon
Sea Salt to Taste
White Ground Pepper to Taste
2 Tbsp Olive Oil
1/2 Tsp Raw Sugar
Preparation
Soak the raw cashews in lukewarm water for an hour.
After an hour, dump the water, drain, and tap with a clean unscented cloth or a food-grade paper cloth.
From the half lemon, peel a small slice of zest (only the yellow part) and set it aside.
Place the cashews into a blender bowl.
Add the sea salt, sugar, white pepper, lemon zest, lemon juice, olive oil, and mustard ( homemade mustard recipe here) and blend pulse mode for 30 seconds.
After 30 seconds, add four tablespoons of spring water and blend pulse mode for about a minute.
After a minute, add the remaining water and blend for 30 seconds in pulse mode.
After 30 seconds, blend for 30 seconds on low speed until smooth and creamy.
