About the Recipe

Chickpeas velouté is a must for those who love a tasty cozy meal.

Ingredients

  • 2 Cans Chickpeas

  • 2 Yukon Gold Potatoes

  • 1/2 Cup Heavy Cream

  • Parsley to Taste

  • 2 Tsp Extra Virgin Olive Oil

  • 2 Tsp Sea Salt

  • 2 Cups Spring Water


Preparation


  1. Rinse and peel the potatoes; dice them and boil them in a water cup.

  2. Add one teaspoon of sea salt and one teaspoon of extra virgin olive oil, cook, and set aside.

  3. Add the chickpeas, parsley, one teaspoon of sea salt, and one teaspoon of extra virgin olive oil, and blend using a blender.

  4. Blend the potatoes, adding a cup of water to them.

  5. Combine the two blends into a medium size pot and simmer till creamy.

  6. Pour the heavy cream into a small pot and bring it to a boil.

  7. Plate by pouring the veloutée of chickpeas and potatoes into a soup bowl.

  8. Garnish by placing two tablespoons of heavy cream in the middle of the plate, then with a pointy teaspoon swirl creating @ symbol alike.
