About the Recipe
Zucchini are refreshing, they are rich in water and fibers, vitamins and minerals.
Pines are a super food we enjoy consuming at Mad for Med. Rich in iron, magnesium, zinc, phosphorus, fibers, proteins, you name it! The combination of the two is a perfect match with a final touch of extra virgin olive oil.

Ingredients
2 Medium Size Zucchini
Pines to Taste
2 Tsp Extravirgin Olive Oil
1 Clove Garlic
Basil Leaves
Preparation
Prepare a medium size pot with water and bring it to a boil.
Prepare a medium size pyrex bowl with ice and water.
Clean the zucchini.
Peel them using a classic veggie peeler.
Dump the ribbons in the boiling water for 30 seconds, drain and
immediately pass them into the iced water for 5 seconds.
Remove the excess water using a clean unscented cloth or a paper cloth.
Cut the garlic into two halves and remove the internal part.
Gently rub the flat sliced part of the garlic on the zucchini ribbons.
Plate and top with pines, extra virgin olive oil and basil leaves.
Enjoy!
